50ml Santa Teresa Gran Reserva

25ml Lime juice

15ml Gomme

8 Mint leaves

Soda water

Garnish: Mint sprig


Muddle the mint leaves in the base of the glass. Add the rum, lime juice and gomme. Half fill the glass with crushed ice and churn with a bar spoon. Fill with more crushed ice and churn some more. Garnish with a mint sprig.
